Squash and cabbage stir fry

Pumpkin apart from being delicious is extremely versatile in the kitchen, we can prepare from a rich pumpkin cream to delicious cakes without sugar.

We will need very few ingredients, apart from cabbage and pumpkin, we will need 20 grams of soy sauce, 10 grams of rice vinegar and 10 grams of peeled and toasted pumpkin seeds.

Plating the cabbage and pumpkin stir fry

To serve, simply serve the sauté in a deep plate and place the toasted pumpkin seeds on it.

Variants

Try adding some onion to the stir fry, it will totally change the flavor. You can also substitute the pumpkin seeds for puffed amaranth grains.

Ingredients for making pumpkin and cabbage stir fry

 320 grs pumpkin cut into thin slicesUse the grater for this
 320 grs julienne white cabbageUse the grater for this
 40 grs of extra virgin olive oil
 20 grs of soy sauce
 10 grs rice vinegar
 10 grs pumpkin seeds"pipes" or substitute for puffed amaranth seeds
 1 garlic clove

Preparation of pumpkin and cabbage stir fry

Put the peeled garlic clove and the olive oil in the Thermomix glass and chop everything for 4 seconds at speed 6.

Lower the ingredients from the glass with the help of the spatula so that they can be fried correctly, cover again and fry for 4 minutes at 120ºC in spoon speed and reverse rotation.

Add the pumpkin cut into slices, the cabbage in julienne strips, the soy sauce and the vinegar to finish sautéing everything for 7 minutes at 120ºC at spoon speed with reverse rotation.

Serve and decorate with the pumpkin seeds or puffed amaranth grains. Add a touch of pepper to taste if desired.
