Cordovan Salmorejo in the Thermomix

Ingredients to make Salmorejo cordobés in the Thermomix

1 kg of well-ripened tomatoes, I recommend those of pear
2 small garlic cloves
150 g of white bread without crust
5 g of vinegar
100 g of extra virgin olive oil
1 cdta of salt

Preparation of Cordovan Salmorejo in the Thermomix

Wash the tomatoes well, removing the branch and the "navel" or stem. Insert them into the thermomix cup.

Peel the garlic, removing its central part to mitigate a little its itching. Add them to the glass.

Program 30 seconds at 5 speed in the thermomix.

Then add the white bread, chop it a little with your hands. Add the vinegar and the teaspoon of salt (adjust to taste).

Grind in the thermomix for 30 seconds at 5 speed. To lower what adheres to the walls of the glass with the spatula and to program 5 minutes at speed 10, rising of progressive form from the 5 while we spill the olive oil by the cover so that it lowers slowly and emulsione.

Save in the fridge until serve.

It can be decorated with chopped hard-boiled egg, some crispy serrano ham or parsley.
