 300 grs pumpkin, peeled and cut into chunks
 400 grs of wheat flour
 50 grs water
 15 grs of chemical yeastor 30 g of fresh yeast or 80 g of sourdough (subtract from the wheat flour)
 15 grs of extra virgin olive oil
 ¼ spoonfuls of salt
 ½ spoonfuls of sugarthat is optional

First add the pumpkin pieces in the thermomix, remember that it must be seedless and peeled. Add the water and program 10 seconds at speed 5 to crush it.

Lower the remains from the walls of the glass with the help of the spatula, add the olive oil and program 10 minutes at 100º C on speed 2. Let it cool down to room temperature.

Add the flour, salt, sugar, yeast (chemical, fresh, or sourdough) and program 20 seconds at speed 5.

Now program 2 minutes at spike speed, with this we will have completed the kneading.

Let sit for at least 1 hour or until mixture has doubled in size. To do this, leave the glass covered with the beaker in position.

Sprinkle the worktable with some flour and knead the pumpkin bread dough a little, it is time to incorporate the pumpkin seeds / seeds into the mixture. Give the desired shape to the bread, it can be a single large one, either round or oval, or you can prepare several small loaves.

Remove the pumpkin bread from the oven and let it rest for at least 5 minutes before cutting it - not only because you don't burn yourself, but also because it will prevent it from caking a bit when you cut it.
