As a child when I came home and felt that delicious smell of onion bread, I would unleash my school bag and run to the kitchen to pick up a piece. Those moments of my childhood were stuck in my memory and I relive them when I prepare the recipe that I leave below.

The recipe must be followed to the letter so that it goes well, the masses are delicate and the times must be respected. Also take into consideration that each oven is different, you should watch the bread so that it does not pass or is not left little done, the burnt onion tastes very bad 🙂

Ingredients to make onion bread in the thermomix

200 g of onion
30 g of extra virgin olive oil
120 g of warm water
10 g of fresh yeast
1 cdta of honey
410 g of strength flour
1 cdta of salt

Peel the onion and cut it into quarters. Add the pieces to the glass of the Thermomix and program 4 seconds at 5 speed.

Add the oil and 6 minutes program to 100 ° C in 1 speed, with this we will have ready the onion so we reserve it.

Without cleaning the Thermomix to take advantage of the juices of the onion, we add the warm water, the yeast and the honey. We temper 37 ° C by programming 2 minutes with 1 speed at this temperature.

Add the force flour and program 10 seconds at 4 speed.

Add the onion and salt at the same time that we programmed 4 minutes in spike.

Verify that the dough is at its point, it should not stick to the fingers. If necessary, add a little more flour and program 1 additional minute at spike speed.

Let the dough rest for 35 minutes, covering the glass with a damp cloth. The dough should fill it completely, touching the cup. Let rest until this point.

Take out the dough and give it the shape you want, I like it traditional, focaccia style so I flatten with my fingers, skewer with a fork and paint with plenty of oil. You can add some salt and rosemary if you want.

Cover with a cloth and let stand for 60 minutes or until doubled in size.

Preheat the oven to 200 ° C and bake from 30 to 40 minutes. Turn halfway through cooking to brown on both sides. Flip again near the end of cooking to make it crispy.
