Fish and Chips o Fish Supper How do you know him in Scotland? It's a dish made with white fish, fried potatoes, cooked peas and a delicious hollandaise sauce. This dish highlights its batter that is deliciously crunchy without absorbing much oil - do not worry, we'll tell you the secret to achieve this.

The fish used is cod, although it can be substituted by hake, haddock, sole or other white fish, so use the one you like the most - it will be equally delicious.

Now, let's talk about the batter - that crunchy crust that amazes everyone who tastes this spectacular recipe, you will be surprised how easy it is and the simplicity of its ingredients: wheat flour, beer, salt and yeast - these are the ingredients that result in the best batter I have ever tasted, and it is that it does not absorb almost oil, it is super golden, its flavor is exquisite and it sticks perfectly with the fish and chips that we are making.

Ingredients to make Fish and Chips in the Thermomix

Fish
500 g of cod or other white fish
1 point of salt
Abundant extra virgin olive oil
Breaded
250 g of wheat flour
some extra wheat flour
3 tbsp yeast type Royal
1 beer can
1 point of salt
Companions
2 large potatoes for frying
225 of cooked peas
1 lemon in quarters

Preparation of Fish and Chips in the Thermomix

1

In a bowl we drain the beer cold, add a point of salt, mix the yeast with wheat flour and sieve on the beer while mixing with the help of a manual rod - the remaining mixture must be consistent to adhere well to the fish fillets and that Chips and Chips is as special as it is. We booked our batter mix.

2

Dry the fish very well with absorbent paper, this step is necessary for the batter to adhere properly. Once well dry, we salted and passed through flour. Meanwhile, heat olive oil over medium high heat, without getting to smoke.

3

Once the fish is floured and the oil is hot, we pass fillet steak for our delicious mixture of batter that we have prepared, then fry it 4 minutes on each side or until it is well browned. Drain the excess oil with a grid or strainer, do not use napkins or absorbent paper because we will lose the crunchiness of the batter.

Serve with French fries, a lemon quarter, hollandaise sauce and cooked peas.

    1. Hi Jose, there are recipes that do not need it and yet they deserve a corner in our blog - the thermomix can serve us for example for the sauce, where if necessary - or to give a touch to the flour so that it is much looser . I almost always end up using it.

I hope you enjoy the recipe, it is very tasty, thanks 🙂
