Do you want to know the trick so that the crepes are thin and juicy? It is in cooking, medium high heat - going over means that they remain hard - you have to cook them in a very short period of time, a single turn and to the plate. I have a pancake, but you can make them with a pan without problem - the most important thing if you are going to use a pan is that it is non-stick, and then the spatula, very thick would be a problem, the same if it is not very flexible, so keep this in mind before breaking many crepes trying to flip them with a wooden spatula.

500 g milk
50 g water
20 g unsalted butter or extra virgin olive oil
1 pinch of salt

Add the milk, water and butter (or oil) in the Thermomix glass and mix everything for 5 seconds at 5 speed.

Add the rest of the ingredients to the glass and program 20 seconds at 4 speed. Let the dough rest 20 minutes.

Heat a pan over medium high heat and add a little butter, spreading it with a napkin to cover the entire pan. Raise the pan by the handle and with the other hand add a little mixture while moving the pan circularly so that our crepe mixture covers the entire surface, leave about 15 seconds to the fire and try to take off one of its sides, When it's easy to do it, turn the pancake with the help of your fingers.

Tip: If you have crepe, it will be much easier, they have two pieces, one to expand the mix and another to flip it easily. It is a good investment that if you have a place to store it it is worth it, they are very economical.
