Cooked croquettes, as their name implies, are croquettes whose base is cooked meat, if we have a little left we can take advantage of it and make it by making these fried delicacies that today we will learn to prepare.

Ingredients to make cooked croquettes in the Thermomix

 850 grs of whole milk
 500 grs cooked meat
 250 grs of wheat flour
 200 grs of breadcrumbs
 150 grs meat brothor vegetable
 150 grs of onion
 80 grs of extra virgin olive oil
 4 boiled eggs
 White pepper
 Nutmeg
 ½ spoonfuls of salt
 4 beaten eggs
 Abundant oil for frying

Preparation of cooked croquettes in the Thermomix

With the Thermomix glass clean and dry, add the meat and chop it for 6 seconds / speed 6.

Add the boiled eggs and crush 2 seconds / speed 4.

Reserve our cooked meat with the eggs and all mixed and minced in a bowl or large container.

Without washing the glass, put the onion peeled into quarters, the olive oil and chop all 4 seconds / speed 6.

Sauté 8 minutes / 120ºC / spoon speed.

When finished, add the wheat flour and sauté 4 minutes / 120ºC / speed 2.

Add milk, meat (or vegetable) broth, salt, nutmeg and pepper to taste. Program 15 minutes / 100ºC / speed 4.

Check the salt level and adjust it to your liking if necessary and program 4 minutes / varoma temperature / speed 2.

Take our mixture directly to the bowl where we had the meat with eggs and stir everything in an enveloping way with the help of the Thermomix spatula, which is wonderful for this.

Once everything is well mixed, we cover with transparent film without leaving air, that is, the film touching the mixture of the croquettes.

Let it sit like this for at least 30 minutes to cool down.

Once tempered, we put it in the refrigerator for at least 6 hours - it is necessary not to skip this step.

Once the mixture is cool and settled, we put our breadcrumbs in one source and our 4 beaten eggs in another.

We introduce the mixture of croquettes that we have in the refrigerator in a pastry bag and proceed to make the croquettes of about 3 CM thick by 4 CM long, cutting with a knife and overflowing them in the breadcrumbs, then pass them through the beaten egg, and again for breadcrumbs. We place them on a plate, or in a container if we want to freeze them.

Once all the croquettes are formed, heat plenty of oil to fry, turn them over when they brown and place them on a wire rack or metal strainer to remove excess fat, do not use absorbent paper if you want them to be crispy.
