The first thing we are going to do is crush the garlic and onion. To do this, we peel them and place them in the thermomix glass, cutting them into pieces that fit in the cup. Cover and program 5 seconds at speed 5.

Lower the onion and garlic from the walls of the Thermomix and add the extra virgin olive oil to poach everything for 6 minutes at varoma temperature, speed 1.

We add the tomato, the sugar, the salt and if we want a point of pepper.

We place the varoma in its position with the pieces of cod and optionally the potatoes greased in oil with a point of salt, this if we have decided to accompany it with potatoes. Put the skin of the cod down (if you have it) and program for 30 minutes at varoma temperature, speed 2.

We check that the fish is just right. We serve with the sauce over the fish, and if we want, a drizzle of lemon to give it more acidity (I love it).
