 150 grs roasted or cooked chicken
 45 grs of onion
 45 grs of butter or margarine
 100 grs of wheat flour
 400 grs of whole milk
 Ground nutmegthat is optional
 Ground cinnamonthat is optional
 Salt
 Extra virgin olive oilin abundance, to fry
For the batter of the croquettes
 Egg
 Bread crumbs
 Wheat

Preparation of chicken croquettes in the Thermomix

Put the chopped chicken in the Thermomix glass and program 5 seconds / progressive speed 5-10 and reserve, do not wash the glass.

Peel the onion and cut it into quarters, then place it in the Thermomix glass and program 5 seconds / speed 5 to leave it well chopped.

Add the butter to the onion and program 10 minutes / 100ºC / speed 2

With this we will get an almost caramelized and very delicious onion.

Now add half the chicken, the 100g of wheat flour and program 4 minutes / 100ºC / speed 2.

Add the 400g of milk, salt, cinnamon and nutmeg to taste - just a pinch of the latter, don't overdo it. Program 10 seconds / speed 6 to mix everything very well.

Program another 8 minutes / varoma temperature / speed 4, with this our croquettes dough will be almost ready.

Add the rest of the chicken and mix well with the spatula, using wrapping movements. Reserve in a container and cover with plastic wrap touching the mixture so that it does not dry out and form a crust. Put the container in the fridge for at least 4 hours, if you leave them overnight, much better.

When forming the croquettes the important thing is the technique, take small portions of the dough and pass them through the flour, then beaten egg, breadcrumbs and let it rest for a while in the air before frying them.

Heat plenty of olive oil, although there are those who fry them in sunflower or corn oil, whichever you prefer. Place the croquettes being careful not to burn yourself and let them brown while you turn them. Drain on a wire rack, not paper, to crisp up.
