We are going to prepare some zucchini and red pesto spaghetti and grana padano cheese in the Thermomix that are to suck your fingers. A recipe so colorful and delicious that it will surely surprise everyone at the table. It has hazelnuts that provide a toasted flavor and that breaks the traditional in favor of a modern and daring cuisine.

To make zucchini spaghetti it is necessary that we have a special peeler called spiralizer that transforms a zucchini into the blissful spaghetti, it is possible to say that this vegetable is ideal for its neutral flavor and because they remain whole when cooked in a way that perfectly replaces the traditional and caloric pasta without subtracting absolutely nothing.

The dried tomato can also be obtained in oil, it would be ideal in this way since it has the flavor concentrated by maceration. If we do not find it in oil, we can buy dried tomato and leave it at least overnight in oil, for this the ideal is to heat water until it is to boil and turn off. Place a glass bowl inside with olive oil and tomatoes, so that the water is more or less level with the oil. Let stand several hours. In this step we can add a basil, rosemary or chilli leaf to add more flavor to pesto.

Now we are going to prepare some delicious zucchini spaghetti with red pesto and grana padano cheese, a delicious and healthy alternative to traditional pasta.

Ingredients to make zucchini spaghetti with red pesto and grana padano cheese in the Thermomix

300 g of zucchiniunpeeled
3 dry tomatoesmacerated in oil as explained above
20 g roasted and peeled hazelnutscan be replaced by cashews
½ garlic clove
30 g grana padano cheeseIt can be replaced by Parmesan cheese
1 drizzle of olive oil
1 pinch of salt
1 basil leaf
1 pinch thyme

Preparation of zucchini spaghetti with red pesto and grana padano cheese in the Thermomix

Add 500g of water to the glass and bring to a boil by programming 5 minutes at 100ºC at speed 1.

Meanwhile, wash and dry the zucchini and cut it into "spaghetti" using the special peeler / scratcher - it's called a spiralizer.

Place these strips in the varoma container.

With the varoma in position and our zucchini spaghetti inside it, we program 10 minutes at varoma temperature in speed 2.

Reserve the cooked zucchini spaghetti in a warm place to avoid cooling while continuing with the recipe. We discard the water.

Scratch the grana padano cheese or place a piece in the Thermomix glass very clean and dry, programming 5 seconds at speed 8. Reserve

Drain the dried tomatoes, removing the herbs, and place them in the glass next to half a clove of garlic, toasted and peeled hazelnuts and a washed basil leaf. Chop for 4 seconds at speed 5 and mix with the cheese.

Spread over the zucchini spaghetti already placed and bathe with a dash of EVOO (extra virgin olive oil) to finish sprinkling with a pinch of thyme and colored pepper.
