Ingredients to make watermelon Gazpacho

 500 grs watermelon
 500 grs of ripe tomatoes
 1 small spring onion
 50 grs cucumberor melon
 50 grs of green pepperor red
 1 garlic clovethat is optional
 50 grs of extra virgin olive oil
 15 grs of apple cider vinegar
 ½ cdta of saltadjust to the diner's taste

Watermelon Gazpacho Preparation

Place all the ingredients except the extra virgin olive oil in the thermomix glass and blend everything for 60 seconds at speed 5.

Program again 60 minutes at progressive speed 5-10 to make it very fine.

Program without time at speed 5 and add the EVOO little by little, letting it fall on the lid with the cup in place so that it emulsifies with the watermelon gazpacho. When it finishes going down, we go up for a few seconds at speed 7.

Let it rest in the fridge for at least 1 hour before serving, always very cool. Reserve in the fridge what we are not going to consume at the moment.
