The Swiss or simply Swiss buns are typical of Madrid, its name is due to the bakery that prepared them in Calle Alcalá. This variant of the brioche has a cut on its surface that is filled with sugar to give it that characteristic touch, and today we are going to show you how to prepare them in the Thermomix

The fluffy Swiss buns are eaten with breakfast or snack, along with a coffee will surprise you.

I like to add something of custard cream as decoration. You can also accompany them with hot chocolate.

Let's prepare this delight, some rich Swiss in the Thermomix.

Ingredients to make Swiss thermomix

Swiss
170 g milk
75 g of sugar
120 g butter
40 g of fresh yeast
4 large eggs
550 g of strength flour
1 cdta of salt
To paint and present
1 Big egg
100 g Of sugar

Preparation of Swiss thermomix

1

Milk, sugar and butter are added to the glass, beating 2 minutes / 37 ° C / speed 3.

2

Add the yeast and 4 eggs, mix 5 seconds at 4 speed.

3

Half of the flour is added and 15 seconds are mixed at 6 speed.

4

The rest of the flour is incorporated and the Thermomix 3 minutes in spike is programmed. Let the dough rest about 30 minutes, it should double its size, otherwise leave more time.

5

Sprinkle the countertop or work area with flour and place the dough to work it. We are going to remove it in the form of a cylinder, cutting portions of about 70 grams. Our dough should be soft and sticky, so with a little flour we are going to roll the portions and place them on a tray with baking paper or silicone tablecloth, separated from each other by at least 5 centimeters.

Let it rest in a closed and temperate place, I use the oven to which I have previously given a touch of heat. Let them double their size again.

6

When they have reached their size, we make a small incision with a knife or cutter, paint with a beaten egg and add crystallized or wet sugar.

7

Preheat the oven to 240 ° about 5 minutes and bake the Swiss rolls for 8 minutes.

8

Verify that they are golden and let them rest outside the oven. To enjoy our rich Swiss in the Thermomix 🙂
