Do not be fooled that although it is an easy recipe it is delicious and has little or nothing to envy other more elaborate and expensive recipes in terms of time, it is very convenient not to have to wait hours until the traditional bread doubles the size and you I explain everything in this recipe. Although we will use fresh yeast, we can substitute it for dry baker's yeast if necessary - another point in favor, since we do not always have this at home (in fact, I hardly ever have it).

The crust of this easy homemade bread is delicious, so leave it its necessary baking time and if you have a fan, leave it for a few minutes before finishing it, so that it is uniform and does not overcook. The crumb can be brought to the point you want by adding more or less kneading time, if you like a large and rustic crumb, little kneading, try lowering it for a few seconds, if on the contrary you like the small and dense crumb knead a lot, increasing the time .

 10 grs of sugar
 45 ml of extra virgin olive oilAOVE

Without thermomix: Add the warm water to a deep bowl together with the crumbled fresh yeast and sugar and stir in an enveloping way until everything is well integrated.

With thermomix: Add the warm water, the crumbled yeast and the sugar to the Thermomix glass, program 5 seconds at speed 5.

Without thermomix: Add half of the common or all-purpose flour and the extra virgin olive oil, stirring everything in such a way as to ensure that there are no lumps, crushing them to undo them. Let it rest for about 20 minutes at room temperature, covering the bowl with a damp cloth.

With thermomix: Add half of the all-purpose or common wheat flour and the oil to the glass together with the mixture from the previous step, program 5 seconds at speed 3 and then 10 seconds at spike speed (knead). Let stand 20 minutes with the lid and the cups in place.

Without thermomix: It is time for you to add the rest of the flour, salt and stir vigorously. Sprinkle the work table with some wheat flour and continue to knead by hand until you get the desired consistency, with a few minutes is enough if you want the crumb to be rustic, if you want it soft, knead about 10 minutes.

With thermomix: Add both the remaining flour and the salt to the thermomix glass and program 30 seconds in spike mode (kneading). You can knead a little more if you want the crumb to be smooth.

It is time to preheat the oven, the ideal temperature is 200ºC with fire up and down.

Make a ball and place it on baking paper on the tray where we are going to bake the homemade bread, you can spread a little oil on the paper to improve its lower crust. You can allow an extra 10 minutes of rest if you're not in a rush. Make a few small, not very deep cuts with an exact or very sharp knife, this will help to prevent the bread from opening - and if you want a more rural or rustic air, try sprinkling our bread roll with some flour before baking it.
