Delicious carrot cake with nuts ideal for this Christmas

With the arrival of Christmas, their dishes appear, lovely and full of calories to withstand the cold weather of these holidays, or so I deceive myself to have the perfect excuse to prepare and taste desserts by these dates 😉

In order not to be so brazen, I try to make them as healthy as possible, such as this Christmas carrot cake recipe, loaded with aromas and a unique flavor that nuts and cinnamon give it.

My version has much less sugar than the original recipe and almost half of the oil, where I also use our EVOO (Extra Virgin Olive Oil) instead of sunflower for reasons of taking care of ourselves a little more in health.

Ingredients for making Christmas carrot and nut cake

200 g of carrotspeeled and cut into 3 or 4 pieces
250 g of wheat flourpastry
280 g of sugar
4 eggs
200 g EVOOExtra Virgin Olive Oil
1 cdta baking soda
1 cdta of chemical yeast(royal powder)
1 vanilla essence trickle
200 g of walnutschopped, thick
15 g of rolled almonds
1 cdta of cinnamon powder
To decorate
Some nuts
Rolled almonds

Preparation of Christmas cake with carrots and nuts

For the carrot cake

Place the peeled and cut carrots in 3 or 4 pieces in the thermomix glass and program 8 seconds at 5 speed.

Add sugar, oil, vanilla, eggs and mix all 8 seconds at 5 speed.

Add the flour, cinnamon, baking soda, salt, nuts and yeast. Program 8 seconds at 4 speed to mix everything.

Preheat the oven to 180 ° C and grease an 28cm mold with a little olive oil, taking it to all corners of it so that it does not stick. Pour the mixture of our cake into the mold, add the rolled almonds on it, being careful to distribute them all over the surface. Let stand a few minutes while heating the oven.

Enter the hot oven and let it bake at 180 ° C for 35 - 40 minutes, heat up and down, ensuring that it does not burn, you know that each oven is unique.

When you think it's ready, prick with a stick in the center, it should come out dry.

Let it cool before unmolding.

Once cold, sprinkle icing sugar on it with the help of a strainer and add our touch, with filleted almonds and some nut - let your imagination fly.
